Wholemeal assortment

Bühler’s state-of-the-art milling equipment allows us to produce very finely milled flour, including wholemeal flour, with granulation of only 160 micrometres.

Thanks to this unique technology, our wholemeal flour is milled to the same milling parameters as plain white flour. This results in wholemeal flour having better nutritional properties, higher water binding and, last but not least, better baking properties and longer shelf life.

Wholemeal flour from Perner Mill has a higher content of fibre and minerals, as we mill the whole grain. In addition, fine milling contributes to better flour binding, a lower glycaemic index (due to lower thermal damage to the starch) and probably also to better usability of bioactive substances due to a smaller particle size and larger active surface.
