What is suitable for

Spelt flour can be used for making savoury and sweet dishes and pastries. Spelt buns, croissants, kolaches, waffles, doughnuts, pancakes, crumpets, cakes, muffins, confectionery and other dishes are popular, giving them a typical delicate nutty taste and aroma. Spelt flour can be used in the same way as the ordinary wheat flour, with which it can be combined in any proportion or it can completely replace it.

About the Perner Mill

Perner Mill is the most modern mill in the Czech Republic equipped with state-of-the-art technology from Bühler. It’s the only mill in the country with a capability to mill wholemeal flour to a very fine granulation of 160 μm. With a production of more than 150,000 tons of flour per year, which represents approximately 14% of industrial flour production in the Czech Republic, it is one of the largest mills in the country. The history of the mill dates to 1420, with records documenting a functioning mill at the exact same site in Svijany, where Perner Mill mills various best quality cereals and pseudocereals according to customers’ parameters to this day.

Since 2018, we have also been producing our own premium flour under the Pernerka brand, which has quickly become popular for its quality and excellent baking properties.
